Quick And Easy Banana And Chocolate Chip Muffins...
We had a few extra bananas this week and a couple were starting to look a little bit ropey so decided that I would make a quick (and when I say quick they literally take five minutes to make before baking!).
This recipe is an all in one recipe - yes if you wanted to you could cream the butter and sugar or whack it straight in a bowl with all ingredients and mix but I've done both ways and whatever way you choose to do they turn out just as good.
This is also an ace recipe because it doesn't require any random ingredients and relies on simple store cupboard ingredients - just add bananas!
What you will need...
- 2 mashed bananas - the older, browner, ones that are usually destined for the bin are best!\ - 150g soft unsalted butter (I used salted butter as that's all I had) - 150g self raising sugar - 3 x large eggs - 150g dark/milk chocolate chips (reserve 50g for the top if you wish)
How to make them... - Line a muffin tin with twelve muffins cases - Preheat the oven to 180c - Add all the above ingredients to a bowl and whisk for two minutes until light and fluffy. - Pour in to the muffin cases and top with reserved chocolate chips - Bake for 25-30 minutes until golden on top.
Store in an airtight container and they will last for a good five days which they won't as I guarantee they will be gobbled up before you know it!
